HISTORY: Château de Saint-Martin is one of the few Provencal estates to continue producing the famous "Vin Cuit" in the traditional way. Elaborated over a wood fire in a large copper cauldron, it is then aged in French oak barrels for several years before being bottled. Once the barrels are emptied, a careful selection of 8-year-old whisky at 76 degrees, from the best Scottish distilleries and previously blended, is poured into them. After 3 to 6 months of aging, when our Master Liquorist and cellar master in Provence judge that the precious staves have imparted the sought-after smoothness, velvety texture, opulence, and fruitiness (Quince), the precious nectar will be ready to offer a refined, persistent finish with a slight smoky touch and a light peaty note on the palate.
SUBTLETY: Smoothness, velvety texture, opulence, and fruitiness (quince) brought by the finishing in cooked wine barrels. Light peaty note on the palate.
